Ingredients

  • 6 pieces chicken thighs (bone-in, skin-on)
  • 8 cloves garlic cloves, minced
  • 3 tablespoons olive oil
  • 0.5 cup dry white wine
  • 0.5 cup chicken broth
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Pat the chicken thighs dry with paper towels and season them generously with salt, black pepper, and smoked paprika on both sides.

Step 2

Heat the olive oil in a large skillet or frying pan over medium-high heat.

Step 3

Once the oil is hot, place the chicken thighs skin-side down in the pan. Sear for 4-5 minutes until the skin is golden and crispy. Flip the thighs and cook on the other side for another 3-4 minutes. Remove the chicken and set aside.

Step 4

Reduce the heat to medium and add the minced garlic to the same pan. Cook for 1-2 minutes, stirring constantly, until fragrant but not browned.

Step 5

Pour in the white wine to deglaze the pan, scraping up any browned bits with a wooden spoon. Let the wine simmer for 2-3 minutes to slightly reduce.

Step 6

Add the chicken broth, dried oregano, and a pinch of salt. Stir well and bring the mixture to a gentle simmer.

Step 7

Return the chicken thighs to the pan, skin-side up, ensuring they are partially submerged in the sauce.

Step 8

Cover the pan and cook on medium-low heat for 25 minutes, or until the chicken is cooked through and tender.

Step 9

Remove the lid and increase the heat slightly to allow the sauce to reduce for another 5 minutes.

Step 10

Garnish with freshly chopped parsley, if desired, and serve hot with crusty bread or over rice to soak up the flavorful sauce.
