  • 1 medium, finely chopped onion
  • 1 medium, diced red bell pepper
  • 2 cloves, minced garlic
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 0.5 teaspoon cayenne pepper
  • 14 ounces canned diced tomatoes
  • 4 eggs
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons, chopped for garnish fresh parsley
  • 4 slices, for serving crusty bread

Directions

Step 1

Heat the olive oil in a large skillet over medium heat.

Step 2

Add the finely chopped onion and diced red bell pepper to the skillet. Sauté for 5-7 minutes, or until softened.

Step 3

Stir in the minced garlic, paprika, cumin, and cayenne pepper. Cook for 1 minute until fragrant.

Step 4

Add the canned diced tomatoes (including their juices) to the skillet. Stir to combine and season with salt and black pepper.

Step 5

Lower the heat, cover, and let the tomato mixture simmer for 10 minutes, stirring occasionally.

Step 6

Using the back of a spoon, make four small wells in the tomato sauce. Crack an egg into each well.
