Bring a large pot of salted water to a boil. Cook the spaghetti according to the package instructions until al dente, then reserve 1 cup of pasta water before draining.
While the pasta is cooking, finely dice the Spanish chorizo and peel and mince the garlic cloves.
In a large nonstick pan, heat the olive oil over medium heat. Add the diced chorizo and cook for 4–5 minutes, stirring occasionally, until the chorizo releases its oils and becomes slightly crispy.
Lower the heat and add the minced garlic to the pan. Cook for 1 minute, stirring constantly to prevent it from burning. Remove the pan from the heat once the garlic becomes fragrant.
In a small mixing bowl, whisk together the eggs and grated Parmesan cheese until well combined. Season with a pinch of salt and freshly cracked black pepper.
