Ingredients

  • 2 tablespoons Olive oil
  • 200 grams Chorizo sausage, sliced
  • 150 grams Serrano ham, diced
  • 1 Onion, finely chopped
  • 3 Garlic cloves, minced
  • 3 medium Russet potatoes, peeled and cubed
  • 400 grams Canned white beans, drained and rinsed
  • 200 grams Turnip greens or collard greens, chopped
  • 1.5 liters Vegetable or chicken stock
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper, freshly ground

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the sliced chorizo and diced Serrano ham. Cook for 3–4 minutes until the meats start to release their fats and become slightly crispy.

Step 3

Stir in the chopped onion and minced garlic. Sauté for 5 minutes until the onion is soft and translucent.

Step 4

Add the cubed potatoes to the pot and stir to coat them in the flavorful oils. Cook for 2–3 minutes.

Step 5

Pour in the chicken or vegetable stock and bring to a gentle boil. Reduce the heat to low, cover, and simmer for 20–25 minutes or until the potatoes are tender.

Step 6

Stir in the white beans and chopped greens (turnip or collard greens). Simmer uncovered for another 10–12 minutes until the greens are tender.

Step 7

Season the soup with salt and freshly ground black pepper to taste.

Step 8

Serve the Caldo Gallego hot, optionally with crusty bread on the side.
