  • 1 lb ground beef (80/20 blend)
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp smoked paprika
  • 2 tbsp olive oil
  • 4 oz Manchego cheese (sliced)
  • 4 burger buns
  • 4 leaves romaine lettuce
  • 1 tomato (sliced)
  • 0.5 cup romesco sauce
  • 0.5 red onion (thinly sliced)
  • 2 cloves garlic (minced)
  • 1 red bell pepper
  • 0.25 cup blanched almonds
  • 1 tbsp sherry vinegar
  • 1 slice crusty bread (for romesco sauce)
  • 1 tbsp parsley (chopped)

Directions

Step 1

Preheat your grill or stovetop grill pan to medium-high heat.

Step 2

In a small skillet over medium heat, toast the slice of bread until golden on both sides. Set it aside.

Char the red bell pepper over an open flame (or broil in the oven) until the skin is blackened. Place in a bowl, cover, and allow it to steam for 10 minutes. Peel off the skin, remove the seeds, and set the flesh aside.

To make the romesco sauce, blend the roasted red pepper, toasted bread, blanched almonds, garlic, olive oil (1 tbsp), and sherry vinegar in a food processor until smooth. Add salt to taste.
