  • 2 Carrots (peeled and sliced into 1/2-inch rounds)
  • 1 Red bell pepper (sliced into strips)
  • 2 tablespoons Fresh parsley (chopped, for garnish)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Heat the olive oil in a large, heavy-bottomed pot or Dutch oven over medium heat.
