Ingredients

  • 3 tablespoons olive oil
  • 1 medium, finely chopped yellow onion
  • 2 minced garlic cloves
  • 1 cup long-grain white rice
  • 2 cups water or vegetable broth
  • 10 ounces, roughly chopped fresh spinach
  • 2 tablespoons, finely chopped fresh dill
  • 2 tablespoons, finely chopped fresh parsley
  • 3 tablespoons lemon juice
  • 1 teaspoon, or to taste salt
  • 0.5 teaspoons, or to taste black pepper
  • 0.5 cup, crumbled (optional, for garnish) feta cheese
  • 4 for serving (optional) lemon wedges

Directions

Step 1

Heat a large pan or skillet over medium heat and add the olive oil.

Step 2

Add the chopped onion and sauté for 4-5 minutes until softened and translucent.

Step 3

Stir in the minced garlic and cook for another 1 minute until fragrant.

Step 4

Add the rice to the pan and stir well to coat the grains with the oil and aromatics.

Pour in the water or vegetable broth, then bring the mixture to a boil.

Step 6

Reduce the heat to low, cover the pan, and simmer for 15 minutes, stirring occasionally to prevent the rice from sticking.

After 15 minutes, add the chopped spinach to the pan, stirring to combine. Cover and cook for another 5-7 minutes until the spinach wilts and the rice is tender.
