  • 8 tablespoons Unsalted butter
  • 2 cups Yellow onion, finely chopped
  • 1 cup Scallions, chopped (white and green parts)
  • 3 pounds Fresh spinach leaves, chopped
  • 4 large Eggs
  • 3 tablespoons Plain breadcrumbs
  • 1 pound Crumbled feta cheese
  • 0.5 cup Grated Parmesan cheese
  • 0.25 teaspoon Nutmeg
  • 1 teaspoon Kosher salt
  • 0.5 teaspoon Freshly ground black pepper
  • 1 package Phyllo dough sheets (defrosted if frozen)
  • 1 cup Unsalted butter, melted (for phyllo dough)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large sauté pan, heat 2 tablespoons of unsalted butter over medium heat. Add the chopped yellow onion and scallions. Sauté for about 5–7 minutes until softened.

Step 3

Add the chopped spinach to the pan and cook for another 5 minutes until wilted. Remove from the heat and set aside to cool slightly.

In a mixing bowl, beat the eggs lightly. Stir in the breadcrumbs, crumbled feta, grated Parmesan, nutmeg, kosher salt, and black pepper.
