Ingredients

  • 800 grams Fresh spinach
  • 3 tablespoons Olive oil
  • 1 medium Yellow onion, finely chopped
  • 2 Garlic cloves, minced
  • 2 tablespoons Fresh dill, chopped
  • 2 tablespoons Fresh parsley, chopped
  • 3 large Eggs
  • 200 grams Feta cheese, crumbled
  • 50 grams Breadcrumbs
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Nutmeg (optional)

Directions

Step 1

Preheat your oven to 180°C (350°F). Lightly grease a medium-sized baking dish with olive oil.

Step 2

Wash the fresh spinach thoroughly and trim off any thick stems. If needed, blanch the spinach in boiling water for 1 minute, then drain and press to remove excess water. Roughly chop the spinach and set it aside.

Step 3

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté for 4-5 minutes until translucent. Add the minced garlic and cook for another 1 minute.

Step 4

Stir in the chopped spinach and cook for 2-3 minutes, until just wilted. Remove from heat and allow the mixture to cool slightly.

Step 5

In a large mixing bowl, whisk the eggs. Add the dill, parsley, crumbled feta, breadcrumbs, salt, pepper, and nutmeg (if using). Mix until well combined.

Add the cooled spinach mixture to the bowl and gently fold everything together until evenly mixed.

Transfer the mixture to the prepared baking dish and spread it out evenly. Drizzle the remaining tablespoon of olive oil over the top.

Bake in the preheated oven for 30-35 minutes, or until the top is golden and the edges are slightly crisp.
