Ingredients

  • 12 oz penne pasta
  • 12 oz Spam (original or flavored)
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 2 cups milk
  • 2 cups shredded cheddar cheese
  • 0.5 cups Parmesan cheese
  • 0.75 cups panko breadcrumbs
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 tsp Italian seasoning
  • 2 tbsp fresh parsley (optional, for garnish)

Directions

Step 1

Preheat the oven to 375°F (190°C). Grease a 9x13-inch baking dish and set aside.

Step 2

Bring a large pot of salted water to a boil. Cook the penne pasta according to the package instructions until al dente. Drain and set aside.

While the pasta is cooking, cut the Spam into small cubes.

Heat a large skillet over medium heat and cook the Spam cubes until golden brown, about 4-5 minutes. Remove from the skillet and set aside.

In the same skillet, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes, whisking constantly to make a roux.
