Ingredients

  • 1 can Spam
  • 2 medium Russet potatoes
  • 1 cup All-purpose flour
  • 2 large Eggs
  • 1 cup Breadcrumbs
  • 2 cups Vegetable oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Pepper
  • 0.5 teaspoon Paprika

Directions

Step 1

Peel and boil the potatoes in a pot of salted water until fork-tender, about 15 minutes, then drain and let cool slightly.

Step 2

Mash the potatoes in a mixing bowl until smooth, and season with salt, pepper, and paprika. Set aside.

Step 3

Open the can of Spam and grate it using a box grater. Mix the grated Spam into the mashed potatoes until evenly distributed.

Step 4

Roll the mixture into small balls, about 1 tablespoon each, then flatten and use a small round cutter (such as the cap of a bottle or a piping nozzle) to cut a hole in the center, forming O-shaped rings.

Step 5

Set up a breading station with three bowls: one with flour, one with beaten eggs, and the last with breadcrumbs.

Step 6

Coat each Spam O in flour, then dip it into the egg, and finally coat it with breadcrumbs. Repeat for all pieces.

Step 7

Heat vegetable oil in a deep skillet or pot to 350°F (175°C). Fry the Spam O's in batches, ensuring not to overcrowd the pot, until golden brown and crispy (about 2-3 minutes per side).

Step 8

Remove the Spam O's using a slotted spoon and transfer them to a plate lined with paper towels to drain any excess oil.

Step 9

Serve hot with your favorite dipping sauce, such as ketchup, aioli, or spicy mayo, and enjoy!
