Rinse the sushi rice under cold water until the water runs clear. This removes excess starch and prevents the rice from becoming too sticky.
Add the rice and 2.5 cups of water to a rice cooker. Cook the rice according to the manufacturer's instructions. If using a pot, bring the rice to a boil, cover, reduce the heat to low, and simmer for about 18 minutes. Remove from heat and let it sit covered for an additional 10 minutes.
While the rice is cooking, remove the Spam from the can and slice it into 8 even slices. Set aside.
Mix soy sauce and sugar in a small bowl until the sugar is fully dissolved.
Heat a non-stick skillet over medium heat. Add the Spam slices to the pan and cook for about 2 minutes on each side or until lightly browned.
Pour the soy sauce and sugar mixture over the Spam slices in the pan and cook until the sauce thickens and coats the Spam, about 1-2 additional minutes. Remove from the heat and set aside.

Cut each nori sheet into thirds lengthwise. You should have 9 strips in total.
Place a strip of nori, shiny side down, on a clean surface. Use a musubi mold or your hands to shape about 1/2 cup of rice into a compact rectangular block that matches the size of the Spam slice.
Place the rice block onto the nori strip. Top it with a slice of caramelized Spam.
Wrap the nori around the Spam and rice combination, using a little bit of water to seal the ends if needed.
Repeat the process for the remaining ingredients.
Serve Spam Musubi warm or at room temperature. Enjoy immediately or store wrapped in plastic wrap to retain freshness.
