Ingredients

  • 12 oz Spam
  • 2 cups Elbow macaroni pasta
  • 3 cloves Garlic
  • 1 medium Yellow onion
  • 1 medium Bell pepper (any color)
  • 14.5 oz Canned diced tomatoes
  • 8 oz Tomato sauce
  • 1 cup Chicken or vegetable broth
  • 2 tbsp Olive oil
  • 1 tsp Paprika
  • 1 tsp Italian seasoning
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 0.5 cup Shredded cheddar or Parmesan cheese (for topping, optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the elbow macaroni according to the package instructions until al dente. Drain and set aside.

Step 2

While the pasta is cooking, dice the Spam into small cubes. Mince the garlic, and finely chop the onion and bell pepper.

Step 3

In a large skillet or pot, heat the olive oil over medium heat. Add the diced Spam and cook for 3-4 minutes until lightly browned. Remove the Spam and set aside.

Step 4

In the same skillet, add the chopped onion, bell pepper, and garlic. Sauté for 4-5 minutes until softened and fragrant.

Step 5

Stir in the canned diced tomatoes (with their juice), tomato sauce, and chicken or vegetable broth. Mix well.

Step 6

Season the mixture with paprika, Italian seasoning, salt, and black pepper. Let it simmer for 5 minutes to allow the flavors to meld.

Step 7

Add the cooked macaroni and browned Spam back into the skillet. Stir well to coat everything evenly in the sauce.

Step 8

Taste and adjust the seasoning if needed. Let everything cook together for 2-3 more minutes, stirring occasionally.

Step 9

Serve warm, optionally topped with shredded cheddar or Parmesan cheese.
