Ingredients

  • 400 grams Spaghettini
  • 4 large Yellow onions
  • 3 tablespoons Olive oil
  • 3 cloves Garlic
  • 2 tablespoons Unsalted butter
  • 125 milliliters Dry white wine
  • 50 grams Parmesan cheese
  • 2 teaspoons Fresh thyme leaves
  • 0 to taste Salt
  • 0 to taste Black pepper

Directions

Step 1

Peel the onions and slice them thinly into half-moons. Mince the garlic cloves.

Step 2

Heat the olive oil in a large skillet over low heat. Add the onions and sprinkle with a pinch of salt.

Step 3

Cook the onions slowly, stirring occasionally, for 25-30 minutes, until they are deeply golden and caramelized.

Step 4

Add the minced garlic and cook for an additional 1-2 minutes, until fragrant.

Step 5

Increase the heat to medium and pour in the white wine. Simmer for 1-2 minutes, scraping up any browned bits from the bottom of the skillet.

Step 6

Stir in the butter and fresh thyme leaves. Cook for another 2-3 minutes, allowing the flavors to meld. Season with salt and black pepper to taste.

Step 7

Meanwhile, bring a large pot of salted water to a boil and cook the spaghettini according to the package instructions until al dente. Reserve 1/2 cup of the pasta cooking water before draining.

Step 8

Add the cooked spaghettini to the skillet with the smothered onions. Toss everything together, adding the reserved pasta water a little at a time to create a silky sauce that coats the pasta.

Step 9

Grate the Parmesan cheese and stir it into the pasta mixture. Adjust the seasoning if needed.

Step 10

Serve immediately, topped with additional Parmesan cheese and a sprinkle of black pepper if desired.
