Preheat your oven to 200°C (400°F).
Cut the tops off the two garlic bulbs to expose the cloves. Drizzle each bulb with 1 teaspoon of olive oil and wrap tightly in aluminum foil.
Place the wrapped garlic bulbs in the oven and roast for 30 minutes, or until the cloves are soft and caramelized.
While the garlic is roasting, bring a large pot of salted water to a boil. Cook the spaghettini according to package instructions until al dente. Reserve 120 ml of the pasta cooking water, then drain the pasta and set aside.
Carefully remove the garlic from the oven and allow it to cool slightly. Squeeze the softened garlic cloves out of their skins and mash them into a paste with a fork.
In a large skillet over medium heat, warm the remaining olive oil and butter. Add the roasted garlic paste and sauté for 1–2 minutes, stirring frequently.
Stir in the crushed red chili flakes, followed by the reserved pasta cooking water. Whisk until the sauce is smooth and slightly thickened.
Add the cooked spaghettini to the skillet and toss to coat thoroughly in the garlic sauce. Season with salt and black pepper to taste.
