  • 50 grams Grated Parmesan cheese (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the spaghettini according to the package instructions until al dente, typically about 8-10 minutes. Drain, reserving 1/2 cup of pasta water, and set aside.

While the pasta cooks, prepare the Checca sauce. In a food processor or blender, combine the cherry tomatoes, fresh basil leaves, garlic cloves, and extra-virgin olive oil. Pulse until the mixture is roughly blended and chunky, not entirely smooth.
