Ingredients

  • 400 grams spaghetti
  • 300 grams smoked sausage
  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic cloves, minced
  • 400 grams crushed tomatoes (canned)
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 0.5 teaspoons red chili flakes
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 50 grams grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • 0 as needed water for boiling pasta

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the spaghetti according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

Step 2

While the pasta is cooking, heat the olive oil in a large skillet over medium heat.

Step 3

Slice the smoked sausage into 1/4-inch thick rounds and add them to the skillet. Sauté for 3-4 minutes, or until browned on both sides. Remove the sausage from the skillet and set aside.

Step 4

In the same skillet, add the diced onion and cook for 2-3 minutes, stirring occasionally, until softened and translucent.

Step 5

Add the minced garlic to the skillet and cook for 30 seconds, stirring constantly to prevent burning.

Step 6

Stir in the crushed tomatoes, tomato paste, dried oregano, dried basil, red chili flakes, salt, and black pepper. Mix well to combine.

Step 7

Return the browned sausage to the skillet and stir it into the tomato sauce. Reduce the heat to low and allow the sauce to simmer for 10 minutes, stirring occasionally.

Step 8

Taste the sauce and adjust seasoning if needed. If the sauce is too thick, add a splash of the reserved pasta water to reach your desired consistency.

Step 9

Add the cooked spaghetti to the skillet with the sauce and toss well to coat the pasta evenly in the sauce.

Step 10

Serve the spaghetti hot, topped with grated Parmesan cheese and chopped fresh parsley for garnish.
