Ingredients

  • 400 grams spaghetti
  • 200 grams smoked salmon, sliced into thin strips
  • 150 grams mascarpone cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice, freshly squeezed
  • 2 tablespoons fresh dill, chopped
  • 60 milliliters white wine (optional)
  • 0 to taste salt
  • 0 to taste black pepper, freshly ground
  • 0 to taste parmesan cheese (optional, for serving)

Directions

Step 1

Bring a large pot of salted water to a boil and cook the spaghetti according to the package instructions until al dente. Reserve 1 cup of pasta cooking water before draining.

Step 2

While the pasta is cooking, heat the olive oil in a large skillet over medium heat.

Step 3

Add the minced garlic to the skillet and sauté for 1 minute, until fragrant.

Step 4

If using, pour in the white wine and let it simmer for 1-2 minutes to slightly reduce.

Step 5

Stir in the mascarpone cheese, lemon zest, and lemon juice, mixing until the mascarpone is melted and creates a smooth sauce.

Step 6

Add the smoked salmon strips to the sauce and stir gently to combine. Cook for 1-2 minutes to warm the salmon without overcooking.

Step 7

Add the drained spaghetti to the skillet and toss to coat in the sauce. If the sauce is too thick, gradually add reserved pasta water, a few tablespoons at a time, until the desired consistency is reached.

Step 8

Season with salt and freshly ground black pepper to taste.

Step 9

Remove the skillet from heat and stir in the chopped dill.

Step 10

Serve immediately, optionally garnishing with grated Parmesan cheese and additional dill.
