Ingredients

  • 400 grams spaghetti
  • 6 tablespoons extra virgin olive oil
  • 5 pieces garlic cloves, thinly sliced
  • 6 pieces anchovy fillets, finely chopped
  • 0.5 teaspoons crushed red pepper flakes (optional)
  • 2 tablespoons fresh parsley, finely chopped
  • 1 teaspoon lemon zest (optional)
  • 1 teaspoon salt
  • 0.5 teaspoons ground black pepper
  • 1 cup reserved pasta cooking water

Directions

Step 1

Bring a large pot of salted water to a boil. Add the spaghetti and cook until al dente according to the package instructions.

While the spaghetti cooks, heat the olive oil in a large skillet over medium heat.

Add the sliced garlic to the skillet and cook, stirring frequently, until it becomes golden and fragrant, about 2 minutes. Be careful not to burn the garlic.

Add the chopped anchovy fillets to the skillet and use a wooden spoon to break them down as they melt into the oil, about 1-2 minutes.
