Ingredients

  • 400 grams spaghetti
  • 100 grams arugula (rocket)
  • 2 whole lime
  • 3 cloves garlic
  • 4 tablespoons extra virgin olive oil
  • 50 grams Parmesan cheese
  • 0.5 teaspoons red pepper flakes
  • 1 teaspoons salt
  • 0.5 teaspoons black pepper
  • 50 milliliters pasta water

Directions

Step 1

Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 50 ml of pasta water before draining the spaghetti.

Step 2

While the pasta cooks, zest and juice one of the limes. Slice the second lime into wedges for serving.

Step 3

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook for 1 minute until fragrant, being careful not to burn it.

Stir in the red pepper flakes, lime zest, and lime juice. Cook for 1 minute to combine the flavors.
