Ingredients

  • 12 oz spaghetti
  • 1 lb shrimp, peeled and deveined
  • 3 tbsp olive oil
  • 2 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 whole lemon, juiced and zested
  • 2 tbsp parsley, chopped
  • 0.5 tsp red pepper flakes
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.25 cup parmesan cheese, grated (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the spaghetti according to the package instructions until al dente. Reserve 1 cup of pasta water before draining the spaghetti. Set aside.

Step 2

While the pasta is cooking, pat the shrimp dry with a paper towel and season with salt and black pepper.

Step 3

In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the shrimp in a single layer and cook for 2-3 minutes per side, or until they are pink and cooked through. Remove the shrimp from the skillet and set aside.

Reduce the heat to medium. Add the remaining 1 tablespoon of olive oil and the butter to the skillet. Once the butter has melted, add the minced garlic and cook for 1-2 minutes, stirring frequently, until fragrant.
