Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, about 8-10 minutes. Drain and set aside, reserving 1/2 cup of the pasta water.
While the spaghetti cooks, heat 2 tablespoons of olive oil in a large skillet over medium heat.
Remove the casing from the Italian sausage and add it to the skillet. Break the sausage into small pieces with a wooden spoon and cook for 5 minutes, or until browned and fully cooked. Remove the sausage from the skillet and set aside on a plate.
In the same skillet, add the diced onion and cook for 3-4 minutes, or until softened. Add the minced garlic and cook for an additional 1 minute until fragrant.
Stir in the diced tomatoes (including their juices), tomato paste, dried basil, dried oregano, crushed red pepper flakes, salt, and black pepper. Simmer for 5 minutes, allowing the flavors to meld.
Add the baby spinach to the skillet and cook for 2-3 minutes, or until wilted.
Return the cooked sausage to the skillet and stir to combine. If the sauce is too thick, add some reserved pasta water a few tablespoons at a time until the desired consistency is reached.
Add the drained spaghetti to the skillet and toss to coat the pasta evenly in the sauce. Cook for 2 minutes to allow the flavors to combine.
Remove the skillet from heat and serve immediately. Top each serving with grated Parmesan cheese and chopped parsley, if desired.
