Ingredients

  • 12 oz spaghetti
  • 2 tbsp extra virgin olive oil
  • 12 oz Italian sausage (mild or hot)
  • 1 medium (finely diced) yellow onion
  • 3 minced garlic cloves
  • 14.5 oz diced tomatoes (canned, no salt added)
  • 2 tbsp tomato paste
  • 5 cups baby spinach
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 0.25 tsp crushed red pepper flakes
  • 0.5 tsp salt
  • 0.5 tsp ground black pepper
  • 0.5 cup Parmesan cheese (optional, for garnish)
  • 2 tbsp fresh parsley (optional, chopped for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, about 8-10 minutes. Drain and set aside, reserving 1/2 cup of the pasta water.

Step 2

While the spaghetti cooks, heat 2 tablespoons of olive oil in a large skillet over medium heat.

Remove the casing from the Italian sausage and add it to the skillet. Break the sausage into small pieces with a wooden spoon and cook for 5 minutes, or until browned and fully cooked. Remove the sausage from the skillet and set aside on a plate.

Return the cooked sausage to the skillet and stir to combine. If the sauce is too thick, add some reserved pasta water a few tablespoons at a time until the desired consistency is reached.

Add the drained spaghetti to the skillet and toss to coat the pasta evenly in the sauce. Cook for 2 minutes to allow the flavors to combine.

Step 9

Remove the skillet from heat and serve immediately. Top each serving with grated Parmesan cheese and chopped parsley, if desired.
