Ingredients

  • 400 grams spaghetti
  • 60 ml extra virgin olive oil
  • 6 garlic cloves
  • 1 teaspoon red chili flakes (optional)
  • 2 tablespoons parsley, fresh and finely chopped
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 30 grams parmesan cheese (optional, grated)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente. Reserve about 1 cup of pasta water before draining the spaghetti.

Step 2

While the pasta cooks, peel and finely slice the garlic cloves.

Step 3

Heat the olive oil in a large, deep skillet over medium heat. Add the sliced garlic and sauté for 1-2 minutes, stirring frequently, until the garlic is golden and fragrant. Be careful not to burn it.

Step 4

If using, add the red chili flakes into the skillet and sauté for an additional 30 seconds to release their flavor.

Step 5

Add the drained spaghetti to the skillet with the garlic oil. Toss to coat the pasta evenly in the oil and garlic.
