Ingredients

  • 400 grams spaghetti
  • 60 milliliters extra virgin olive oil
  • 6 large, thinly sliced garlic cloves
  • 2 teaspoons dried red chili flakes
  • 1 teaspoon salt
  • 2 tablespoons, chopped fresh parsley
  • 50 grams, grated (optional) parmesan cheese
  • 120 milliliters pasta cooking water

Directions

Step 1

Bring a large pot of water to a boil. Add the teaspoon of salt to the water, then cook the spaghetti according to package instructions until al dente. Reserve 120 ml (½ cup) of pasta cooking water before draining the spaghetti.

Step 2

While the pasta cooks, heat the olive oil in a large skillet over medium heat.

Step 3

Add the thinly sliced garlic to the skillet and sauté for 1-2 minutes until it becomes fragrant and just golden. Be careful not to let it burn.

Step 4

Add the dried red chili flakes to the skillet and stir for 30 seconds to release their flavor.

Step 5

Lower the heat and add the reserved pasta cooking water to the skillet. Stir to combine, creating an emulsified sauce.

Step 6

Add the drained spaghetti to the skillet and toss well to coat the pasta in the garlic and chili oil.

Step 7

Remove the skillet from heat and mix in the freshly chopped parsley. Toss one final time to distribute evenly.

Step 8

Taste and adjust seasoning if necessary with a pinch of salt or extra chili flakes.

Step 9

Serve immediately with grated Parmesan cheese on top if desired.
