Ingredients

  • 400 g Spaghetti
  • 500 g Boneless, skinless chicken breast
  • 2 tablespoons Olive oil
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 4 Garlic cloves, minced
  • 50 g Butter
  • 1 cup Chicken broth
  • 2 tablespoons Lemon juice
  • 50 g Grated Parmesan cheese
  • 2 tablespoons Fresh parsley, chopped
  • 1 teaspoon Lemon zest

Directions

Step 1

Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

Step 2

While the pasta is cooking, cut the chicken breast into bite-sized pieces. Season with salt and pepper.

Step 3

In a large skillet over medium-high heat, add 1 tablespoon of olive oil. Once hot, add the chicken pieces and cook for about 5-7 minutes, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

Step 4

In the same skillet, reduce the heat to medium and add the remaining tablespoon of olive oil. Add the minced garlic and sauté for 1-2 minutes, or until fragrant.
