Ingredients

  • 400 g spaghetti
  • 60 g butter
  • 40 g all-purpose flour
  • 500 ml milk
  • 200 g cheddar cheese, grated
  • 50 g parmesan cheese, grated
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp nutmeg, freshly grated (optional)

Directions

Step 1

Fill a large pot with water and add a pinch of salt. Bring it to a boil over high heat.

Step 2

Add the spaghetti to the boiling water and cook according to package instructions, until al dente.

Step 3

While the spaghetti is cooking, start the cheese sauce. In a medium saucepan, melt the butter over medium heat.

Step 4

Once the butter is melted, add the flour and whisk continuously for about 1 minute until it forms a smooth paste, known as a roux.

Step 5

Gradually add the milk to the roux, whisking constantly to prevent lumps. Continue to cook, stirring frequently, until the sauce thickens, about 5-7 minutes.

Step 6

Lower the heat to medium-low and add the grated cheddar and parmesan cheeses. Stir until the cheeses have melted completely and the sauce is smooth.

Step 7

Season the cheese sauce with salt, black pepper, and nutmeg if using. Taste and adjust seasoning as needed.

Step 8

Once the spaghetti is cooked, drain it well and return it to the pot.

Step 9

Pour the cheese sauce over the spaghetti and toss until the pasta is well coated.

Step 10

Serve immediately, garnished with extra cheese or freshly cracked black pepper, if desired.
