Ingredients

  • 400 grams spaghetti
  • 150 grams bacon
  • 300 grams cherry tomatoes
  • 125 milliliters dry white wine
  • 3 cloves garlic
  • 2 tablespoons olive oil
  • 50 grams Parmesan cheese (grated)
  • 0.5 teaspoons red pepper flakes
  • 1 to taste salt
  • 1 to taste black pepper
  • 2 tablespoons fresh parsley (chopped)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the spaghetti according to the package instructions until al dente. Reserve 1/2 cup of pasta water before draining and set the pasta aside.

Step 2

While the pasta cooks, chop the bacon into bite-sized pieces. Heat a large skillet over medium heat and cook the bacon until crispy, about 5-7 minutes. Remove the cooked bacon with a slotted spoon and set aside on a paper towel-lined plate.

Step 3

In the same skillet, add the olive oil if there isn’t enough rendered fat from the bacon. Mince the garlic and add it to the skillet, cooking for 1 minute until fragrant.

Step 4

Halve the cherry tomatoes and add them to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the tomatoes soften and release their juices.

Add the red pepper flakes and white wine to the skillet. Stir and let it simmer for 3 minutes to reduce slightly.

Return the cooked bacon to the skillet and stir. Add the drained pasta to the skillet, tossing to combine. If the mixture seems dry, add a splash of the reserved pasta water until you achieve your desired consistency.

Season with salt and black pepper to taste. Stir in the grated Parmesan and fresh parsley, mixing until well combined.

Serve immediately, garnished with extra Parmesan and parsley if desired.
