  • 0.25 teaspoons black pepper
  • 50 grams parmesan cheese, grated (optional)
  • 120 milliliters pasta water

Directions

Step 1

Bring a large pot of salted water to a boil. Add the spaghetti and cook until al dente according to the package instructions. Reserve 120 milliliters (1/2 cup) of pasta water, then drain the spaghetti and set aside.

Step 2

In a large skillet, heat the olive oil and butter over medium heat until the butter is melted and bubbling.

Add the anchovy fillets to the skillet. Use the back of a wooden spoon to mash the fillets into the oil and butter until they dissolve and create a smooth, fragrant mixture.
