Ingredients

  • 4 garlic cloves, minced
  • 6 anchovy fillets, chopped

  • 28 ounces canned whole peeled tomatoes, crushed by hand
  • 0.75 cups kalamata olives, pitted and halved
  • 2 tablespoons capers, rinsed and drained
  • 1 teaspoons dried oregano
  • 12 ounces spaghetti
  • 0.25 cups fresh parsley leaves, chopped
  • 0 salt, to taste
  • 0 black pepper, to taste

Directions

Step 1

Heat the olive oil in a large skillet over medium heat.

Step 2

Add the minced garlic, anchovy fillets, and crushed red pepper flakes. Cook, stirring frequently, until the anchovies dissolve and the garlic becomes fragrant but not browned, about 2 minutes.

Step 3

Reduce the heat slightly and pour in the crushed canned tomatoes. Stir to combine and simmer for 10 minutes, stirring occasionally.

Step 4

Add the Kalamata olives, capers, and oregano to the skillet. Stir well and continue to simmer for another 10 minutes, allowing the sauce to thicken and the flavors to meld.
