Ingredients

  • 400 grams spaghetti
  • 3 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 4 minced garlic cloves
  • 300 grams cremini mushrooms
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 0.5 cup whole milk
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons, chopped fresh parsley
  • 0.25 teaspoon grated nutmeg
  • 3 liters water
  • 1 tablespoon salt for pasta water

Directions

Step 1

Bring 3 liters of water to a boil in a large pot. Add 1 tablespoon of salt for pasta water. Cook the spaghetti according to the package instructions until al dente. Reserve 1/2 cup of pasta water before draining.

Step 2

While the pasta cooks, clean and slice the cremini mushrooms into thin slices.

Step 3

In a large skillet, melt 2 tablespoons of butter and 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for 30 seconds, until fragrant.

Add the sliced mushrooms to the skillet and cook for 6-8 minutes, stirring occasionally, until the mushrooms are golden and have released their liquid. Remove the mushrooms from the skillet and set aside.

In the same skillet, add the remaining 1 tablespoon of butter. Pour in the heavy cream and whole milk, stirring to combine. Bring the mixture to a gentle simmer over medium heat.

Add the grated Parmesan cheese, salt, black pepper, and nutmeg to the skillet. Stir constantly until the cheese has melted and the sauce is smooth, about 3-4 minutes.

Add the cooked spaghetti to the skillet and toss gently to coat the noodles evenly with the sauce. If the sauce is too thick, add a splash of the reserved pasta water to reach your desired consistency.
