Ingredients

  • 400 g spaghetti
  • 400 g ripe cherry tomatoes
  • 60 ml extra virgin olive oil
  • 3 garlic cloves
  • 0.5 tsp red chili flakes
  • 10 fresh basil leaves
  • 50 g grated Parmesan cheese
  • 1 tsp salt
  • 0.25 tsp pepper
  • 4 L water for boiling

Directions

Step 1

Bring 4 liters of water to a boil in a large pot. Add 1 teaspoon of salt to the boiling water.

Step 2

Add the spaghetti to the pot and cook according to the package instructions until al dente, about 8-10 minutes. Stir occasionally to prevent sticking.

Step 3

While the pasta is cooking, heat the olive oil in a large skillet over medium heat.

Finely chop the garlic cloves and add them to the skillet. Sauté for 1-2 minutes until fragrant but not browned.

Cut the cherry tomatoes in half and add them to the skillet. Sauté for 5-7 minutes until the tomatoes soften and release their juices.
