Ingredients

  • 200 grams spaghetti
  • 4 large eggs
  • 50 grams parmesan cheese
  • 2 cloves garlic
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon parsley (optional)
  • 2 liters water (for boiling)

Directions

Step 1

Bring a large pot of water to a boil and add 1 teaspoon of salt. Cook the spaghetti according to package instructions until al dente. Reserve 1/4 cup of pasta water, then drain the spaghetti.

Step 2

While the spaghetti cooks, crack the eggs into a bowl and whisk them with a pinch of salt and black pepper until well combined. Set aside.

Step 3

Grate the parmesan cheese and finely mince the garlic. If using parsley, chop it finely and set aside.

Step 4

Heat 2 tablespoons of olive oil and 1 tablespoon of butter in a large skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes, or until fragrant but not browned.
