Ingredients

  • 400 grams spaghetti
  • 1.5 cups sweet corn (frozen or fresh)
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 medium onion (finely chopped)
  • 3 pieces garlic cloves (minced)
  • 1 cup heavy cream
  • 0.5 cup grated Parmesan cheese
  • 0.5 cup milk
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon red chili flakes (optional)
  • 2 tablespoons fresh parsley (finely chopped, for garnish)
  • 4 liters water

Directions

Step 1

Bring 4 liters of water to a rolling boil in a large pot. Add a generous pinch of salt and cook the spaghetti according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti and set aside.

Step 2

Heat the butter and olive oil in a large skillet or saucepan over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.

Stir in the minced garlic and cook for another 30 seconds until fragrant.

Add the sweet corn to the skillet and cook for 2-3 minutes, stirring occasionally.
