Ingredients

  • 12 oz spaghetti
  • 1 lb ground beef
  • 2 tbsp olive oil
  • 1 medium onion
  • 3 pieces garlic cloves
  • 14 oz (can) diced tomatoes
  • 14 oz (can) kidney beans
  • 2 tbsp tomato paste
  • 1 cup beef broth
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 0.25 tsp cayenne pepper
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 cup cheddar cheese (shredded)
  • 2 tbsp fresh parsley

Directions

Step 1

Bring a large pot of salted water to a boil over high heat. Add the spaghetti and cook according to the package instructions until al dente, usually about 8-10 minutes. Drain and set aside.

Step 2

While the pasta cooks, heat the olive oil in a large skillet or pot over medium heat. Add the diced onion and cook for 4-5 minutes, stirring occasionally, until softened.

Step 3

Add the minced garlic to the skillet and cook for another 1-2 minutes until fragrant.

Step 4

Increase the heat to medium-high, add the ground beef, and cook until browned, breaking it apart with a wooden spoon as it cooks. This should take about 5-6 minutes. Drain excess fat if necessary.

Step 5

Stir in the chili powder, cumin, paprika, cayenne pepper, salt, and black pepper, ensuring the beef is well-coated with the spices.

Step 6

Add the diced tomatoes (with their juices), kidney beans (drained and rinsed), tomato paste, and beef broth to the skillet. Stir to combine.

Step 7

Lower the heat to a simmer and let the mixture cook for 15-20 minutes, stirring occasionally, until the chili has thickened and the flavors have melded together.

Step 8

Divide the cooked spaghetti onto serving plates or bowls. Ladle the chili mixture over the top of the spaghetti.

Step 9

Garnish with shredded cheddar cheese and freshly chopped parsley before serving. Enjoy!
