Ingredients

  • 400 grams Spaghetti
  • 4 large Eggs
  • 100 grams Parmesan cheese
  • 50 grams Pecorino Romano cheese
  • 150 grams Pancetta (diced)
  • 100 ml Heavy cream
  • 2 cloves Garlic (minced)
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 50 grams Breadcrumbs
  • 1 tablespoon Butter

Directions

Step 1

Preheat your oven to 180°C (350°F). Grease a pie dish and set aside.

Step 2

Cook the spaghetti in a large pot of salted boiling water until just shy of al dente. Drain and rinse with cold water to stop the cooking process.

Step 3

In a large skillet, heat the olive oil over medium heat. Add the diced pancetta and cook until crispy. Add the minced garlic and cook for another 1-2 minutes. Remove from heat and let cool slightly.

In a large mixing bowl, whisk together the eggs, heavy cream, Parmesan, Pecorino Romano, salt, and black pepper until well combined.
