Ingredients

  • 400 grams spaghetti
  • 2 tablespoons olive oil
  • 1 medium, finely chopped onion
  • 3 minced garlic cloves
  • 400 grams canned crushed tomatoes
  • 150 milliliters heavy cream
  • 0.5 teaspoons red pepper flakes
  • 1 teaspoons dried oregano
  • 10 leaves fresh basil leaves
  • 1 teaspoons (or to taste) salt
  • 0.5 teaspoons black pepper
  • 50 grams freshly grated Parmesan cheese
  • 4 liters water

Directions

Step 1

Bring 4 liters of water to a boil in a large pot. Add a generous pinch of salt to the boiling water and cook the spaghetti according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the spaghetti and set aside.

Step 2

In a large, deep skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until softened and translucent.

Step 3

Add the minced garlic and red pepper flakes to the skillet. Sauté for an additional 30 seconds, stirring constantly to avoid burning the garlic.

Step 4

Pour in the canned crushed tomatoes and stir in the dried oregano, salt, and black pepper. Reduce the heat to low and let the sauce simmer for about 10 minutes, stirring occasionally.

Step 5

After the sauce has simmered, slowly stir in the heavy cream. Continue cooking for another 5 minutes, allowing the flavors to meld together. Adjust the seasoning with additional salt and pepper if needed.

Step 6

Add the cooked spaghetti to the skillet with the sauce, tossing to coat the pasta evenly. If the sauce is too thick, add a splash of the reserved pasta water to achieve the desired consistency.

Step 7

Tear the fresh basil leaves into smaller pieces and stir them into the spaghetti. Sprinkle the freshly grated Parmesan cheese over the top and toss lightly to combine.

Step 8

Serve the Spaghetti Bo Ghetti immediately, garnished with extra Parmesan cheese and basil leaves, if desired. Enjoy!
