Ingredients

  • 400 grams Spaghetti
  • 150 grams Pancetta (or Guanciale)
  • 4 large Egg yolks
  • 100 grams Parmesan cheese (or Pecorino Romano)
  • 2 teaspoons Black pepper
  • 1 teaspoon Salt
  • 1 tablespoon Olive oil

Directions

Step 1

Bring a large pot of salted water to a boil. Add the spaghetti and cook until al dente according to the package instructions.

Step 2

While the spaghetti is cooking, prepare the pancetta by cutting it into small strips or cubes.

Step 3

Heat a large skillet over medium heat and add the olive oil. Once warm, add the pancetta and cook until crispy, about 5-7 minutes. Remove from heat.

In a medium bowl, whisk together the egg yolks, grated Parmesan cheese, and black pepper until smooth. Set aside.

Once the spaghetti is cooked, reserve 1 cup of the pasta cooking water. Drain the rest of the water and immediately transfer the hot spaghetti into the skillet with the pancetta.
