Ingredients

  • 400 grams spaghetti
  • 3 tablespoons extra virgin olive oil
  • 4 garlic cloves, thinly sliced
  • 2 red chili peppers, dried or fresh, chopped
  • 800 grams canned whole tomatoes
  • 1 to taste salt
  • 1 to taste black pepper
  • 2 tablespoons fresh parsley, chopped
  • 50 grams Parmesan cheese, grated
  • 1 teaspoon sugar
  • 0 as needed water for boiling

Directions

Step 1

Bring a large pot of salted water to a boil and cook the spaghetti according to the package instructions until al dente. Reserve 1 cup of the pasta cooking water and then drain the rest.

Step 2

In a large skillet, heat the olive oil over medium heat.

Add the thinly sliced garlic and chopped red chili peppers to the skillet. Sauté for about 1-2 minutes, or until the garlic is fragrant and starting to get golden. Be careful not to burn the garlic.
