Ingredients

  • 400 grams Spaghetti
  • 60 ml Extra-virgin olive oil
  • 6 pieces Garlic cloves
  • 1 teaspoon Red pepper flakes
  • 2 tablespoons Fresh parsley
  • 2 teaspoons Salt
  • 50 grams Parmesan cheese (optional)
  • 120 ml Pasta cooking water

Directions

Step 1

Bring a large pot of water to a boil. Add 1 teaspoon of salt and cook the spaghetti according to the package instructions until al dente. Reserve 120 ml of the pasta cooking water before draining the pasta.

Step 2

While the pasta is cooking, peel and thinly slice the garlic cloves.

Step 3

In a large, deep skillet, heat the olive oil over medium heat. Add the garlic slices and sauté gently until they are golden brown and fragrant, being careful not to burn them (about 2-3 minutes).

Step 4

Add the red pepper flakes to the skillet and stir for an additional 30 seconds to release their flavor.

Step 5

Reduce the heat to low. Add the cooked pasta to the skillet along with the reserved pasta water. Toss the spaghetti in the garlic oil until well coated and heated through (about 1-2 minutes).

Step 6

Season with the remaining teaspoon of salt and stir in the chopped parsley.

Step 7

Serve immediately, garnished with freshly grated Parmesan cheese if desired.
