  • 2 cups all-purpose flour
  • 4 eggs
  • 0.5 cups milk
  • 1 teaspoon salt
  • 2 tablespoons butter
  • 1 large yellow onion
  • 1 cup Gruyère cheese (shredded)
  • 1 cup cheddar cheese (shredded)
  • 0.25 teaspoon pepper
  • 2 tablespoons parsley (optional, chopped)
  • 1 tablespoon olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.

In a large mixing bowl, whisk together the flour and salt. Make a well in the center and add the eggs and milk. Stir until a thick, sticky dough forms.

Bring a large pot of salted water to a boil. Using a spaetzle maker or colander with large holes, press the dough through into the boiling water. Cook the spaetzle in batches, removing them with a slotted spoon once they float to the surface (about 2-3 minutes). Set aside.

Meanwhile, peel and slice the onion thinly. Heat olive oil and 1 tablespoon of butter in a skillet over medium heat. Add the onions and cook, stirring occasionally, until golden brown and caramelized (about 15 minutes).
