  • 2 tablespoons Sugar
  • 1 teaspoon Gochugaru (Korean chili flakes) or red pepper flakes (optional)
  • 1 leaf Bay leaf

Directions

Step 1

Peel the fresh garlic cloves, ensuring they are clean and free of blemishes. Set aside.

In a small saucepan, combine soy sauce, rice vinegar, water, sugar, and gochugaru (if using). Add the bay leaf for added flavor.

Place the saucepan over medium heat and stir the mixture until the sugar has completely dissolved. Once dissolved, bring the mixture to a light simmer and then remove it from the heat. Let the brine cool to room temperature.
