Ingredients

  • 6 pieces large eggs
  • 0.5 cup soy sauce
  • 0.5 cup water
  • 0.25 cup mirin
  • 1 tablespoon sugar
  • 2 cloves garlic
  • 1 stalk green onions
  • 1 inch piece ginger

Directions

Step 1

Start by boiling a pot of water. Gently lower the 6 large eggs into the boiling water using a spoon to prevent cracking.

Step 2

Boil the eggs for 6 to 7 minutes, depending on whether you prefer a slightly runny yolk or a firmer one.

Step 3

While the eggs are boiling, prepare an ice water bath in a large bowl.

Step 4

Once the eggs have finished boiling, transfer them immediately to the ice bath. Let them cool for at least 5 minutes.

Step 5

Meanwhile, prepare the marinade. Mince the 2 cloves of garlic, thinly slice the green onions, and slice the 1 inch piece of ginger.

Step 6

In a medium bowl, combine the 0.5 cup of soy sauce, 0.5 cup of water, 0.25 cup of mirin, 1 tablespoon of sugar, minced garlic, sliced green onions, and sliced ginger. Stir to dissolve the sugar.

Step 7

After the eggs have cooled, carefully peel them under running water to help remove the shells cleanly.

Step 8

Place the peeled eggs into a ziplock bag or a deep bowl.

Step 9

Pour the soy sauce marinade over the eggs, ensuring they are completely submerged. Seal the bag or cover the bowl with plastic wrap.

Step 10

Refrigerate the eggs in the marinade for at least 4 hours or up to overnight for the best flavor.

Step 11

Before serving, remove the eggs from the marinade. Slice each egg in half to expose the yolk.

Step 12

Serve the marinated eggs as a standalone snack or as an addition to your favorite ramen or rice dish.
