Ingredients

  • 400 g firm tofu
  • 300 g asparagus
  • 3 tbsp soy sauce
  • 1 tbsp maple syrup
  • 1 tsp rice vinegar
  • 1 tsp sesame oil
  • 2 cloves garlic
  • 1 tsp ginger
  • 1 tbsp cornstarch
  • 2 tbsp water
  • 2 tbsp vegetable oil
  • 1 tsp sesame seeds
  • 2 stalks green onions

Directions

Step 1

Press the tofu for 15 minutes to remove excess moisture and cut it into 1-inch cubes.

Step 2

Trim the woody ends from the asparagus and slice into 2-inch pieces.

Step 3

Mince the garlic and grate the ginger.

Step 4

In a small bowl, whisk together soy sauce, maple syrup, rice vinegar, sesame oil, garlic, and ginger to prepare the soy glaze.

In another small bowl, mix cornstarch and water to create a slurry, and set aside.

Step 6

Heat 1 tablespoon of vegetable oil in a large non-stick skillet over medium heat.

Add the tofu cubes and cook for 5-7 minutes, flipping occasionally, until golden brown and crispy on all sides. Remove from the skillet and set aside.

Add the remaining 1 tablespoon of oil to the skillet and sauté the asparagus for 3-4 minutes until tender-crisp.

Return the tofu to the skillet with the asparagus.

Pour the soy glaze over the tofu and asparagus, stirring to coat evenly.
