Ingredients

  • 4 pieces Chicken thighs (bone-in or boneless)
  • 0.5 cup Soy sauce
  • 2 tablespoons Brown sugar
  • 3 cloves Garlic (minced)
  • 1 teaspoon Ginger (grated)
  • 1 tablespoon Sesame oil
  • 1 tablespoon Rice vinegar
  • 0.25 cup Water
  • 1 tablespoon Cornstarch
  • 2 stalks Scallions (sliced for garnish)
  • 1 teaspoon Sesame seeds (optional for garnish)
  • 0.5 teaspoon Black pepper

Directions

Step 1

In a mixing bowl, combine soy sauce, brown sugar, minced garlic, grated ginger, sesame oil, rice vinegar, and black pepper. Whisk until the sugar dissolves completely.

Step 2

Place the chicken thighs in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, making sure it is evenly coated. Cover and refrigerate for at least 30 minutes, or up to 12 hours for best flavor.

Step 3

When ready to cook, remove the chicken from the marinade and reserve the marinade for later use.

Step 4

In a large skillet or frying pan, heat a bit of oil over medium-high heat. Add the chicken thighs and sear for 3-4 minutes on each side, until golden brown.

Step 5

Reduce the heat to medium. Pour the reserved marinade into the pan with the chicken, then add 1/4 cup of water. Cover and let the chicken cook for 15-20 minutes, turning occasionally, until fully cooked and the internal temperature reaches 165°F (75°C).

Step 6

In a small bowl, mix the cornstarch with 2 tablespoons of water to create a slurry. Add this mixture to the pan and stir gently to thicken the sauce. Let simmer for another 2-3 minutes until the sauce is glossy and thick.

Step 7

Transfer the chicken to a serving dish, spooning the sauce over the top. Garnish with sliced scallions and sesame seeds, if desired.

Step 8

Serve hot with steamed rice or your favorite side dish.
