Ingredients

  • 2 cups All-purpose flour
  • 0.5 teaspoons Salt
  • 2 large Eggs
  • 2 tablespoons Water
  • 0.5 pounds Ground pork
  • 1 teaspoon Grated ginger
  • 2 cloves Minced garlic cloves
  • 1 teaspoon Sesame oil
  • 2 tablespoons Chopped green onions
  • 4 cups Vegetable broth
  • 2 teaspoons Fish sauce
  • 1 teaspoon Black vinegar
  • 0.25 teaspoons White pepper
  • 1 cup Chopped bok choy
  • 1 teaspoon Chili oil (optional)

Directions

Step 1

In a large mixing bowl, whisk together the all-purpose flour and salt.

Step 2

Make a well in the center of the flour mixture and add the eggs and water. Stir to combine and knead into a smooth dough. Cover and let it rest for 30 minutes.

Step 3

In a medium bowl, combine the ground pork, grated ginger, minced garlic, sesame oil, and green onions. Mix well to create the wonton filling.

Step 4

Roll out the rested dough very thinly on a floured surface and cut into 3-inch square wonton wrappers.

Step 5

Place a small teaspoon of filling in the center of each wonton wrapper. Fold the wrapper in half diagonally to form a triangle and press the edges to seal. Optionally, bring the two corners together and pinch to form a traditional wonton shape.

Step 6

Bring a large pot of water to a boil. Cook the wontons in batches until they float to the surface, about 3-4 minutes. Remove with a slotted spoon and set aside.

Step 7

In another pot, combine the vegetable broth, fish sauce, black vinegar, and white pepper. Bring to a simmer.

Step 8

Add the chopped bok choy to the broth and cook for 2-3 minutes until tender.

Step 9

To serve, divide the cooked wontons into bowls. Pour the hot broth over the wontons and bok choy.

Step 10

Drizzle with chili oil if desired and garnish with additional green onions. Serve immediately.
