  • 1 whole Large egg
  • 0.5 cup Ube halaya (purple yam jam)
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Ube extract
  • 0.5 cup Powdered sugar (for coating, optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Set aside.

In a large mixing bowl, use a handheld or stand mixer to cream together the unsalted butter, granulated sugar, and light brown sugar until the mixture is light and fluffy, about 2-3 minutes.
