Ingredients

  • 500 grams Chicken breast
  • 3 tablespoons Fish sauce (soy-free)
  • 2 tablespoons Lime juice
  • 1 tablespoon Honey
  • 3 cloves Garlic
  • 0.5 teaspoons Black pepper
  • 1 medium Cucumber
  • 1 medium Carrot
  • 1 small Daikon radish
  • 0.5 cups White vinegar
  • 2 tablespoons Sugar
  • 1 teaspoon Salt
  • 4 pieces Crusty baguettes
  • 4 tablespoons Mayonnaise
  • 1 bunch Fresh cilantro
  • 1 medium Jalapeño

Directions

Step 1

Thinly slice the chicken breast into strips and place them in a bowl.

Step 2

In a small mixing bowl, combine the soy-free fish sauce, lime juice, honey, minced garlic, and black pepper. Pour the marinade over the chicken, mix well, and let it marinate for 20-30 minutes.

Step 3

Meanwhile, prepare the pickled vegetables. Peel and julienne the carrot and daikon radish. Slice the cucumber thinly. In a small saucepan, boil white vinegar, sugar, salt, and 1/4 cup water, then pour the mixture over the carrots and daikon radish in a heat-safe jar. Set aside to pickle.

Step 4

Preheat a skillet over medium heat. Add the marinated chicken strips to the pan and cook for 7-10 minutes until fully cooked. Remove from heat and set aside.

Step 5

Slice the baguettes lengthwise, leaving one side connected to act as a hinge. Spread 1 tablespoon of mayonnaise on each baguette.

Step 6

Layer the cooked chicken, pickled vegetables, fresh cucumber slices, cilantro, and thinly sliced jalapeño inside each baguette.

Step 7

Serve immediately and enjoy your homemade soy-free Banh Mi!
