Ingredients

  • 2 pounds Pork tenderloin
  • 0.25 cup Olive oil
  • 0.25 cup Lemon juice
  • 2 tablespoons Red wine vinegar
  • 4 large Garlic cloves, minced
  • 2 teaspoons Dried oregano
  • 1 teaspoon Dried thyme
  • 1 teaspoon Ground cumin
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 8 pieces Wooden skewers

Directions

Step 1

Trim the pork tenderloin of any excess fat and cut it into 1-inch cubes. Set aside.

Step 2

In a large mixing bowl, whisk together olive oil, lemon juice, red wine vinegar, minced garlic, dried oregano, dried thyme, cumin, salt, and black pepper to create the marinade.

Step 3

Add the pork cubes into the marinade and toss to coat evenly. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, preferably overnight, for maximum flavor.

Step 4

Soak the wooden skewers in water for 30 minutes before grilling to prevent them from burning.

Step 5

Preheat a grill or grill pan over medium-high heat.

Step 6

Thread the marinated pork cubes onto the soaked skewers, leaving a small gap between each cube to ensure even cooking.

Step 7

Grill the skewers for 10-12 minutes, turning every 2-3 minutes, until the pork is cooked through and slightly charred on the edges. The internal temperature should register 145°F (63°C).

Step 8

Remove the skewers from the grill and let them rest for 5 minutes before serving.

Step 9

Serve the souvlaki warm with pita bread, tzatziki sauce, and a side of fresh salad for a traditional Greek meal.
