Ingredients

  • 2 cups Masa harina (corn flour)
  • 1.5 cups Warm water
  • 0.25 teaspoons Salt

Directions

Step 1

In a large mixing bowl, combine the masa harina and salt.

Step 2

Gradually add the warm water while stirring with a spoon or your hands, until the dough comes together.

Step 3

Knead the dough for about 2-3 minutes until smooth and pliable. The dough should feel like soft playdough and not crack when pressed. If too dry, add a tablespoon of water at a time; if too sticky, sprinkle in a bit more masa harina.

Step 4

Divide the dough into 12 equal portions and roll each into a ball. Cover the dough balls with a damp kitchen towel to prevent them from drying out.

Step 5

Cut two pieces of parchment paper or plastic from a zip-top bag to line a tortilla press. This prevents sticking.

Step 6

Place one dough ball between the parchment or plastic in the tortilla press. Press down firmly to flatten into a thin tortilla. If you don't have a tortilla press, you can use a rolling pin to flatten the dough between the parchment/plastic sheets.

Step 7

Preheat a dry skillet or griddle over medium-high heat.

Step 8

Carefully peel the tortilla off the parchment or plastic and transfer it to the hot skillet. Cook for about 30-40 seconds on the first side, flip, and cook for another 40-60 seconds on the other side until slightly puffed and lightly golden. Flip one more time and cook for an additional 10 seconds.

Step 9

Remove the tortilla and keep it warm by wrapping it in a clean kitchen towel. Repeat with the remaining dough balls.

Step 10

Serve warm with your favorite fillings or toppings, or use as a base for dishes like enchiladas or quesadillas.
