Ingredients

  • 1 cup White sesame seeds
  • 0.75 cup Jaggery (grated or powdered)
  • 2 tablespoons Water
  • 0.25 teaspoon Cardamom powder
  • 1 teaspoon Ghee (clarified butter, optional for greasing hands)

Directions

Step 1

Heat a large, dry pan over low-medium heat and add the white sesame seeds.

Step 2

Toast the sesame seeds until they turn light golden and release a nutty aroma, stirring continuously to avoid burning. This should take about 5-7 minutes.

Step 3

Once toasted, transfer the sesame seeds to a plate and let them cool completely.

Step 4

In the same pan, add the grated jaggery and water. Heat on low-medium heat while stirring constantly until the jaggery melts and forms a thick syrup.

Step 5

To test the syrup's readiness, drop a small amount into a bowl of cold water. If it solidifies into a firm ball, the syrup is ready. If it dissolves or remains soft, cook for an additional 1-2 minutes and test again.

Step 6

Once the jaggery syrup is ready, turn off the heat and add the toasted sesame seeds and cardamom powder to the pan. Mix quickly and thoroughly to coat the sesame seeds in the syrup evenly.

Step 7

Let the mixture cool slightly but not completely, as it should still be warm and pliable for shaping the laddus.

Step 8

Grease your hands lightly with ghee (optional) and take a small portion of the mixture. Roll it between your palms to form a round laddu. Repeat this process with the remaining mixture.

Step 9

Allow the laddus to cool completely and firm up. Store them in an airtight container for up to 2 weeks.
